Ingredients

  • 3 1/2 cups bulgur wheat
  • 1/3 cup red onion, chopped
  • 3 mini cucumbers
  • 1/2 cup fresh Italian flat-leaf parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup pistachios, coarsely chopped
  • 2 cups chickpeas, drained
  • 3 tablespoons lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup feta, crumbled, plus more, to taste, for serving
 
 

Directions

Step 1 –Cook the bulgur wheat according to the package directions.

Step 2 –Cool and fluff the bulgur wheat.

Step 3 –Place the red onions into a bowl of cold water.

Step 4 –Let the onions sit in the water for 10 minutes.

Step 5 –Drain the onions.

Step 6 –Toss the bulgur, the red onions, the cucumbers, the parsley, the mint, the pistachios, the chickpeas, the lemon juice, the olive oil, the salt, the pepper, and 1/2 cup of the feta cheese.

Step 7 –Top each serving with the extra feta cheese and serve!
